
Fluffy Gluten Free Pancakes
The best pancakes you can ever make!
Ingredients
240 g plain gluten free flour blend
50 g caster/superfine or granulated sugar
1 tsp baking powder
1 tsp baking soda
½ tsp xanthan gun - Omit if your gluten free flour blend already contains xanthan gum.
½ tsp salt
375 g Milk or Buttermilk
2 US large/UK medium eggs, room temperature
3 tbsp melted unsalted butter
½ tsp vanilla bean paste (or 1 tsp vanilla extract)
Method
Mix all the dry ingredients in one bowl
Mix all the wet ingredients in another
Combine and let sit for 10 to 15 minutes
Heat a skillet or pan to medium heat
Put a large tablespoon of batter and cook each side for 3 to 4 minutes
Serve with butter and maple syrup, or any toppings of your choice
