Fluffy Gluten Free Pancakes

The best pancakes you can ever make!

Ingredients

  • 240 g plain gluten free flour blend

  • 50 g caster/superfine or granulated sugar

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ½ tsp xanthan gun - Omit if your gluten free flour blend already contains xanthan gum.

  • ½ tsp salt

  • 375 g Milk or Buttermilk

  • 2 US large/UK medium eggs, room temperature

  • 3 tbsp melted unsalted butter

  • ½ tsp vanilla bean paste (or 1 tsp vanilla extract)

Method

  • Mix all the dry ingredients in one bowl

  • Mix all the wet ingredients in another

  • Combine and let sit for 10 to 15 minutes

  • Heat a skillet or pan to medium heat

  • Put a large tablespoon of batter and cook each side for 3 to 4 minutes

  • Serve with butter and maple syrup, or any toppings of your choice
